Heritage breeds of hogs are selected that still retain their adaptation to outdoor environments with more foraging ability. We primarily raise the Berkshire breed because of its long history of unsurpassed gourmet meat quality. This breed has been the choice of Royalty and Emperors for centuries. Some other heritage breeds share this reputation a well and we plan to include them in our herd in the near future.
We do not produce "The Other White Meat" type of pork with its mushy, anemic, high tallow, and flavorless eating qualities; not unlike industrial chicken. Berkshire pork is well marbled, with textured, succulent, dark reddish brown pork that is overwhelmingly delicious! Add the touches of a good chef and you will never want any other type of pork.
Berkshire is especially well known for its bacon and ham quality.
Caution! Once you have used this pork you will not wish to go back to industrial pork. You’ll encounter dismay and disappointment which may not be good for business or family relations.
